United States: From this scientific research, one is left with no doubt that the foods we use in preparing delicious meals for our family meal times may be where we get skin rashes. 

It has emerged from recent research that there is one particular ingredient used in the preparation of foods that might contribute to this skin condition, called eczema flares. 

Development of eczema 

In this particular study from UC San Francisco, the authors have suggested that you are more likely to develop eczema if you regularly consume high levels of sodium. 

A research done in JAMA Dermatology revealed that as much as one additional gram of sodium that is found in a Big Mac helps increase an eczema flare-by 22 percent.

Eczema is a form of skin disease that has been documented to affect thirty-one million Americans at one point or another, with the National Eczema Foundation estimating that one in ten persons will be prone to this disease. 

What more have the experts stated? 

According to Dr. Katrina Abuabara, the author of the study, “Most Americans eat too much salt and can safely reduce their intake to recommended levels,” as the New York Post reported. 

Abuabara, an associate professor of dermatology at UCSF, said, “Eczema flares can be difficult for patients to cope with,” especially when they are unable to anticipate them and don’t have recommendations on what they can do to avoid them.” 

More about the research 

In the research undertaken, the scientists analyzed urine samples and clinical documents of over 215,000 British citizens between 30 and 70 years of age.

Specifically, based on the medical prescriptions of the individuals, scientists were able to identify if a person had atopic dermatitis and to identify the severity of the disease

Using multivariate analysis to estimate the likelihood, the research associated each additional gram of sodium in urine over 24 hours with an 11 percent higher likelihood of an eczema diagnosis, an increased probability of an active flare of 16 percent, and an 11 percent increased likelihood that the diagnosed eczema would be severe. 

Then the researchers turned their look to American data. This coming up with this conclusion after conducting a survey on 13,000 adults according to the National Health and Nutrition Examination Survey, they found out that consuming an extra gram of sodium daily pegs the probability of an active case of eczema at 22 percent higher.
